  • 1 packet of instant yeast
  • 1 1/3 cups of warm water
  • 1/2 cup of milk
  • 1/2 cup of yogurt (room temperature)
  • 1 egg yolk (room temperature)
  • 1 tablespoon of softened butter
  • 2 tablespoons of olive oil
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of sesame seeds
  • 1 teaspoon of nigella seeds (black cumin)

Instructions for Making Syrian Ramadan Bread:

  1. Mix the Dry Ingredients:
Sift the flour into a large bowl. Add the yeast and stir to combine evenly.

  2. Add the Liquids:
Pour in the warm water and mix well. Add the milk and stir until combined.

  3. Add Butter and Oil:
Incorporate the softened butter, olive oil, salt, and sugar, mixing until all ingredients are well blended.

  4. Knead the Dough:
Knead the dough for about 10 minutes until it becomes smooth and elastic.

  5. Let the Dough Rise:
Cover the dough with a cloth and leave it in a warm place for at least 2 hours to rise and double in size.

  6. Shape the Dough:
Divide the dough into two equal portions and shape each into a round loaf. Roll each portion to about 2 cm thickness.

  7. Prepare for Baking:
Place the dough in an oiled baking tray. Score the surface with a knife to create a diamond pattern.

  8. Prepare the Egg Wash:
In a small bowl, whisk together the egg yolk and yogurt. Brush this mixture over the top of the dough.

  9. Garnish:
Sprinkle sesame seeds and nigella seeds over the top of the bread.

  10. Bake the Bread:
Preheat your oven to 200°C (390°F). Once the oven reaches the desired temperature, bake the bread for about 30 minutes or until the top turns golden brown.
