Preparation

Step 1: Prepare the Pastry

  • Roll out the pastry dough to about 5 mm thick.

  • Place it into a tart pan, covering the bottom and edges.

  • Blind bake in a preheated oven for 15 minutes until lightly golden, then remove and cool.

Step 2: Prepare the Base Layers

  • Spread a thin layer of crab paste over the cooled crust.

  • In a skillet, melt butter and sauté green onions with spinach over medium heat until wilted.

  • Add a splash of water and chicken broth, cooking until most of the liquid is absorbed.

  • Spread this spinach mixture evenly over the crab paste.

Step 3: Make the Creamy Filling

  • In a bowl, whisk eggs with cream, season with red pepper, and stir in grated Parmesan cheese.

  • Fold in chunks of crab meat.

  • Pour this mixture over the spinach layer inside the tart shell.

Step 4: Bake

  • Bake in the oven for 30–40 minutes, until the tart is set and golden brown on top.

  • Be careful not to overbake, so the crust stays flaky and tender.

Step 5: Serve

  • Let the tart cool slightly before slicing.
