Freekeh with chicken is a popular main dish known for its delicious taste and aromatic smell. It is packed with high nutritional value due to the proteins and fibers found in both chicken and freekeh. Although this recipe requires some time to prepare, it is relatively simple and does not require much effort.

For the Chicken Marinade:

  • ½ a whole chicken, boiled
  • 1 teaspoon of salt
  • 1 tablespoon of ground cumin
  • 1 tablespoon of paprika

For the Freekeh:

  • 2 cups of freekeh grains
  • 2 tablespoons of vegetable ghee
  • 1 large onion, diced into small cubes
  • 1 tablespoon of minced garlic
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground black pepper
  • ½ teaspoon of ground cinnamon
  • 2 cups of chicken broth (or water, depending on preference)
  • ½ teaspoon of salt
  • 5 whole cardamom pods
  • 5 whole cloves
  • 1 cinnamon stick

For Garnishing:

  • Fried almonds

Steps to Prepare Freekeh with Chicken:

  1. Marinating the Chicken:
    Place the boiled chicken in a baking dish. Add the salt, cumin, and paprika, and rub the spices thoroughly over the chicken using your hands for about 3 minutes to ensure even distribution.

  2. Roasting the Chicken:
    Preheat the oven to 180°C (350°F). Place the chicken on the middle rack and roast for about 10 minutes until it turns a light golden color.

  3. Preparing the Freekeh:
    Clean the freekeh grains by removing any debris or small stones, then wash them thoroughly three times. Finally, soak the freekeh in water for 30 minutes before cooking.

  4. Cooking the Freekeh:
    In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and cloves, and stir until their aroma fills the kitchen. Add the minced garlic and diced onions, stirring until they turn golden brown.

  5. Adding the Freekeh:
    Drain the soaked freekeh and add it to the pot along with the ground cumin, black pepper, and cinnamon. Stir for about 2 minutes to allow the flavors to blend. Then, add the chicken broth and salt. Once it starts boiling, cover the pot and cook over medium heat for 10 minutes. Afterward, reduce the heat to low and let the freekeh simmer for 30 minutes until fully cooked.

  6. Serving:
    Once the freekeh is done, transfer it to a serving platter. Arrange the roasted chicken pieces on top, and garnish with fried almonds.
