Al-Maftouqa Al-Beirutiya is a traditional Lebanese dessert known for its distinctive taste and high nutritional value. It’s one of the most famous sweets from Lebanese cuisine, especially in Beirut. This medium-difficulty dessert takes about 15 minutes to prepare and 120 minutes to cook. In this recipe, I’ll provide the ingredients for five people along with the preparation steps, hoping you enjoy this special dessert from Lebanese cuisine.

  • 250 grams of rice
  • 250 ml of tahini
  • 500 grams of white sugar
  • 900 ml of drinking water
  • 2 tablespoons of turmeric
  • 1 tablespoon of ground cinnamon
  • 50 grams of pine nuts

How to Prepare Al-Maftouqa Al-Beirutiya:

  1. Prepare the Rice: Wash the rice thoroughly and soak it in water for a while.

  2. Cook the Rice: Drain the rice and place it in a pot along with drinking water and turmeric (yellow root) over low heat. Let it cook for about 60 minutes, stirring occasionally, until the rice is fully cooked.

  3. Add Sugar and Tahini: Once the rice is cooked, add the white sugar, tahini, and cinnamon to the pot. Stir the mixture occasionally until it begins to boil. Continue stirring constantly with a wooden spoon until the mixture thickens and becomes sticky.

  4. Add the Pine Nuts: Stir in the pine nuts until they are well combined with the mixture (you can also reserve some pine nuts to use as a garnish on top of the serving dishes).

  5. Serve: Once the mixture is ready, pour it into serving dishes and let it cool down. Garnish with pine nuts if desired, and serve to family or guests.
