Ingredients for Falafel Kibbeh:

  • 2 ½ cups of fine bulgur soaked in hot water
  • 1 can of drained fava beans, ground
  • 1 medium sweet potato, boiled, peeled, and mashed
  • 3 medium potatoes, boiled and mashed
  • 1 cup of finely chopped fresh cilantro
  • ½ cup of finely chopped parsley
  • ¼ cup of finely chopped fresh mint
  • 5 fresh basil leaves, finely chopped
  • 1 large onion, finely chopped
  • 4 cloves of crushed garlic
  • 10 ground almonds
  • ¾ cup of white flour
  • 3 tablespoons of cornstarch
  • 1 teaspoon of powdered sugar
  • 1 teaspoon of white vinegar
  • Kibbeh spices (to taste)
  • Black pepper (to taste)
  • ½ teaspoon of turmeric
  • ½ teaspoon of ground cardamom
  • ½ teaspoon of onion powder
  • 1 teaspoon of dried coriander
  • Salt (to taste)
  • Vegetable oil (as needed for frying)

How to Prepare Falafel Kibbeh:

  1. Grind the Bulgur: Use a food processor to finely grind the soaked bulgur until completely smooth.

  2. Mix the Ingredients: Add the ground fava beans, mashed potatoes (regular and sweet), parsley, cilantro, basil, mint, garlic, ground almonds, and chopped onion to the bulgur. Mix all ingredients together until they blend well.

  3. Season and Blend: Add white vinegar, black pepper, ground cardamom, turmeric, kibbeh spices, dried coriander, onion powder, and salt. Blend the mixture again using the food processor until the ingredients form a consistent dough.

  4. Form the Kibbeh: Add the white flour and knead the dough with your hands. Shape the mixture into balls or sticks (as preferred).

  5. Fry the Kibbeh: Heat a generous amount of vegetable oil until it’s hot, then fry the kibbeh until golden and crispy on all sides.
