  • ½ cup of vegetable oil.
  • 2 medium-sized onions, finely chopped.
  • 1 teaspoon of turmeric.
  • 1 kg (2.2 lbs) of lamb (preferably shank), cut into medium cubes.
  • 1250 ml (4½ cups) of water.
  • 2 beef bouillon cubes.
  • 120 grams (1 cup) of dried small beans (such as kidney beans), soaked overnight.
  • 2 dried limes (limoo amani).
  • 1 large potato, peeled and cut into small cubes.
  • 1½ cups of finely chopped spinach.
  • ½ cup of finely chopped cilantro.
  • 1½ cups of finely chopped parsley.
  • ½ cup of finely chopped garlic chives.
  • ¼ cup of finely chopped fenugreek.

How to Prepare Ghormeh Sabzi:

  1. Sauté the onions: Heat half of the vegetable oil in a pot over medium heat. Add the finely chopped onions and stir until they turn golden brown.

  2. Add the turmeric and meat: Stir in the turmeric and cook for another 2 minutes. Add the lamb cubes and stir over high heat until the meat turns brown.

  3. Simmer the meat: Add the water and the bouillon cubes to the pot. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 30 minutes.

  4. Add beans and dried lime: Stir in the soaked beans and simmer for another 40 minutes until the meat is fully cooked.

  5. Fry the herbs and potatoes: In a separate pan, heat the remaining oil over medium heat. Add the potato cubes and fry them until they become golden brown. Then, add the spinach, cilantro, parsley, garlic chives, and fenugreek to the pan. Stir-fry the mixture for about 4 minutes.

  6. Combine everything: Add the fried herb and potato mixture to the pot with the lamb and beans. Pierce the dried limes with a fork and add them to the stew. Cover the pot and let it simmer on low heat for another 10 minutes.

  7. Season and serve: Season the stew with salt and pepper according to taste. Stir everything together and let it cook for a few more minutes until well combined.
