Ingredients for Iranian Ghormeh Sabzi:
- 1 kg of lamb meat.
- 4 bunches of fresh spinach, washed, drained, and finely chopped.
- 1 bunch of finely chopped fresh fenugreek.
- 1 large onion, finely chopped.
- Red kidney beans (amount as preferred).
- 1 teaspoon of mixed spices.
- Black pepper (amount as preferred).
- Salt (amount as preferred).
- 2 dried black limes (limoo amani), cleaned and either ground or cut into small pieces.
- Vegetable oil (amount as preferred).
- 3 cloves of crushed garlic.
- 2 tablespoons of tomato paste.
Preparation Method for Iranian Ghormeh Sabzi:
Place the lamb meat in a pot filled with water, bring it to a boil, and simmer until the meat is cooked through. Then, remove the meat, keeping the broth aside.
In a separate pot, heat a desired amount of vegetable oil over medium heat. Add the crushed garlic and chopped onion, stirring occasionally until the onion becomes translucent.
Add the coriander and fenugreek, stirring briefly. Then, add black pepper, salt, and mixed spices, stirring everything together to combine.
Add the boiled meat, spinach, and kidney beans, mixing all ingredients until well combined. Cover the pot and let it cook on medium heat for about two minutes.
After the spinach has wilted, uncover the pot and gradually add the reserved meat broth until the desired thickness is reached.
Add the dried lime pieces, mixing them well with the other ingredients.
