For the Kibbeh Dough:

  • 1 kg of bulgur wheat.
  • 700 g of beef, cut into pieces.
  • 400 g of chopped onions.
  • 150 g of cumin.
  • 50 g of salt.
  • 10 g of cinnamon.
  • 100 g of fresh mint.
  • 100 g of lemon juice.

For the Filling:

  • 500 g of minced meat.
  • 200 g of chopped onions.
  • 20 g of salt.
  • 10 g of black pepper.
  • 100 g of walnuts.
  • 50 g of spicy pepper paste.
  • 50 ml of pomegranate molasses.
  • 10 g of cinnamon.
  • 100 g of animal ghee.

For Garnishing:

  • Finely chopped parsley (as desired).
  • Crushed hazelnuts (as desired).

Preparation Method for Kibbeh Tart with Minced Meat:

Preparing the Kibbeh Dough:

  1. Wash the bulgur wheat thoroughly, then drain the water.

  2. In a large mixing bowl, combine the beef, washed bulgur, chopped onions, lemon juice, and fresh mint. Sprinkle in the salt, black pepper, cumin, and cinnamon, mixing all the ingredients well.

  3. Knead the mixture using a kibbeh grinder or food processor until a cohesive dough is formed.

Preparing the Filling:

  1. Heat the animal ghee in a pot over medium heat, add the chopped onions, and stir until softened. Add the minced meat and stir occasionally.

  2. To the filling, add the walnuts, pomegranate molasses, spicy pepper paste, salt, and black pepper. Continue to cook, stirring, until the filling is fully cooked and well-blended.

Assembling the Kibbeh Tart:

  1. Press the kibbeh dough into small tart molds designed for baking.

  2. Preheat the oven to 180°C (350°F). Place the tart molds in the oven and bake until the dough is cooked.

  3. Once baked, fill each tart mold with the prepared filling, then garnish with crushed hazelnuts and chopped parsley.
