- 700 grams of ready-made tomato sauce.
- ¼ cup of chopped parsley.
- 450 grams of finely minced chicken breast.
- 1 cup of mashed pumpkin.
- 250 grams of ricotta cheese.
- ½ cup of grated Parmesan cheese.
- ½ cup of grated mozzarella cheese.
- 250 grams of cannelloni pasta.
- Salt, to taste.
- Black pepper, to taste.
Preparation Method:
Prepare the tomato sauce:
Heat the olive oil in a non-stick saucepan over medium heat. Add the minced garlic and chopped onions, stirring until the onions soften.Add the tomato sauce:
Pour the tomato sauce into the pan and let it simmer for about 5 minutes until the mixture thickens.Season the sauce:
Sprinkle the black pepper, salt, and chopped parsley into the sauce. Mix well to combine the flavors, then remove the saucepan from the heat and set aside.Prepare the filling:
In a mixing bowl, combine the mashed pumpkin, minced chicken, ricotta cheese, and half of the grated Parmesan cheese. Mix thoroughly until the ingredients are well blended.Prepare the baking dish:
Grease a baking dish or Pyrex dish lightly with butter. Spread one-third of the tomato sauce evenly across the bottom.Stuff the cannelloni:

Pour the remaining tomato sauce over the stuffed cannelloni. Sprinkle the rest of the Parmesan cheese and the grated mozzarella on top.Bake the dish:
