  • 44 ladyfinger biscuits.
  • 1 cup of frozen raspberries.
  • 1 cup of frozen strawberries.
  • 1 cup of water.
  • ½ cup of white sugar.
  • 1 packet of strawberry-flavored jelly.
  • 2 sheets of gelatin, dissolved in a small amount of water.
  • 1 tablespoon of cornstarch, dissolved in a small amount of water.
  • 300 grams of liquid cream.
  • 4 packets of vanilla.
  • 3 tablespoons of powdered sugar.
  • 300 grams of cream cheese (Philadelphia).
  • Strawberry juice, as needed.

Preparation Method

Step 1: Prepare the Berry Mixture

  1. In a saucepan, combine the frozen strawberries, raspberries, white sugar, and water. Bring the mixture to a boil over medium heat.
  2. Stir in the jelly packet, followed by the dissolved gelatin, mixing continuously until fully incorporated.
  3. Reduce the heat, add 2 packets of vanilla and the dissolved cornstarch, and stir until the mixture thickens.
  4. Remove the mixture from heat, blend it well with an electric mixer, and set it aside to cool.

Step 2: Prepare the Cream Filling

  1. In a separate bowl, whip the liquid cream with 2 packets of vanilla and powdered sugar until fluffy and smooth.
  2. Add the cream cheese to the whipped cream and mix thoroughly until the ingredients are well combined.

Step 3: Assemble the Charlotte Cake

  1. Line the base and sides of a springform cake pan with ladyfinger biscuits, ensuring there are no gaps. Lightly soak the biscuits with strawberry juice.
  2. Combine half of the berry mixture with the cream filling and mix well. Pour half of this mixture over the biscuits in the pan.
  3. Add another layer of biscuits on top of the cream layer and drizzle lightly with strawberry juice.
  4. Pour the remaining cream mixture over the biscuits, then top it with a final layer of biscuits.
  5. Lightly soak the top biscuit layer with strawberry juice and spread the remaining berry mixture over the top to create a smooth, glossy finish.

Step 4: Chill and Serve

  1. Place the cake in the refrigerator for at least 3 hours to set.
  2. Remove the cake from the springform pan, transfer it to a serving plate, and enjoy this delightful dessert with family or guests.
