Chicken Paella – Recipe and Preparation Method

Ingredients for Chicken Paella

  • 300 grams of rice.
  • 4 chicken thighs.
  • 200 grams of cleaned mussels.
  • 200 grams of squid, sliced into rings.
  • 50 grams of frozen peas.
  • 1 medium onion, finely chopped.
  • 10 shrimp.
  • 3 garlic cloves, finely minced.
  • ½ cup of finely chopped parsley.
  • 1 teaspoon of mixed spices.
  • 1 teaspoon of salt.
  • 1 tablespoon of turmeric.
  • 1 tablespoon of paprika.
  • 3 tablespoons of olive oil.
  • 2 tablespoons of fish stock powder.
  • 1 green bell pepper, diced.
  • 1 cup of tomato sauce.
  • 4 cups of water.

Preparation Method

Step 1: Cook the Chicken

  1. Heat olive oil in a suitable pot over medium heat. Add the chicken thighs, season with mixed spices, and sauté until golden brown on all sides.
  2. Remove the chicken from the pot and set aside.

Step 2: Sauté the Vegetables

  1. In the same pot, add the chopped onion and stir until softened.
  2. Add the parsley, minced garlic, and diced green bell pepper. Stir to combine.

Step 3: Add the Spices and Tomato Sauce

  1. Pour in the tomato sauce and season with paprika, turmeric, salt, and cumin. Mix all the ingredients well.

Step 4: Cook the Rice

  1. Add the rice to the pot and stir to allow it to absorb the sauce.
  2. Add the chicken thighs back to the pot along with the squid rings.
  3. Pour in the fish stock and water. Stir gently to combine all the ingredients.

Step 5: Simmer

  1. Cover the pot and let it simmer over low heat for about 20 minutes, or until all the ingredients are fully cooked.

Step 6: Add the Seafood

  1. Add the mussels, shrimp, and peas to the pot during the last 5 minutes of cooking. Allow them to cook through while the flavors meld.

Final Step: Serve

  1. Remove the pot from heat and transfer the paella to a serving dish. Garnish with red bell pepper slices and parsley.
