Fig Charlotte Dessert – Recipe and Preparation Method
Fig Charlotte is a delightful dessert combining the rich flavors of fresh figs and creamy layers. This recipe serves six and is perfect for special occasions or as a unique treat for your family. Follow the steps below to create this exquisite dish.
Ingredients for Fig Charlotte Dessert
For the Figs:
- 6 fresh figs, quartered.
- 15 grams of butter.
- 30 grams of powdered sugar.
- 1 tablespoon of orange zest.
- 100 ml of apple juice.
For the Pear Cream:
- 200 grams of fully ripe pears, peeled and diced.
- 300 grams of cream.
- 75 ml of liquid milk.
- 2 egg yolks.
- 30 grams of sugar.
- 10 grams of gelatin.
- 1 teaspoon of vanilla extract.
For Assembly:
- 20 ladyfinger biscuits.
- Fresh figs, for garnish (optional).
- Almonds, for garnish (optional).
Preparation Method
Step 1: Prepare the Figs
- In a baking dish, combine the butter, powdered sugar, apple juice, figs, and orange zest.
- Preheat the oven to 200°C (392°F). Bake the fig mixture for about 20 minutes, adding a bit of apple juice every 4 minutes to keep it moist.
- Remove from the oven and allow the mixture to cool.
- Mash the figs into a puree and set aside, reserving the sauce separately.
Step 2: Prepare the Pear Cream
- Dissolve the gelatin in a small amount of cold water and set aside to bloom.
- Blend the diced pears in a food processor until smooth. Set aside.
- Heat the milk and vanilla extract in a saucepan over medium heat until it begins to boil.
- In a bowl, whisk the sugar and egg yolks until combined. Gradually pour the hot milk mixture into the egg mixture while whisking continuously.
- Return the mixture to the heat, add the dissolved gelatin, and cook until the mixture thickens.
- Remove from heat and stir in the pear puree. Allow the mixture to cool completely.
- Whip the cream until it forms stiff peaks, then fold it into the pear mixture until well combined.
Step 3: Assemble the Charlotte
- Dip the ladyfinger biscuits in the reserved fig sauce. Arrange them upright around the edges of a Charlotte mold or springform pan.
- Pour half of the pear cream into the base of the mold.
- Layer half of the mashed figs over the cream and cover with more dipped biscuits.
- Repeat the layers, finishing with a layer of cream.
Step 4: Garnish and Serve
- Refrigerate the Charlotte for several hours until fully set.
- Carefully invert the mold onto a serving plate. Garnish with fresh figs and almonds for an elegant touch.
