Grilled kofta with glazed sauce is a flavorful dish packed with nutritional value. This recipe serves three and is both delicious and simple to prepare. Follow the steps below to create this dish that’s perfect for family gatherings or special occasions.


Ingredients for Grilled Kofta with Glazed Sauce

For the Kofta:

  • 500 grams of minced meat.
  • 1 large onion, finely chopped.
  • 3 tablespoons of chopped parsley.
  • 2 tablespoons of breadcrumbs.
  • Salt, to taste.
  • Black pepper, to taste.
  • ½ teaspoon of meat spices.
  • ½ teaspoon of ground cinnamon.
  • ¼ teaspoon of paprika.

For the Glazed Sauce:

  • 1 teaspoon of tomato paste.
  • 2 tablespoons of melted butter or ghee.
  • ½ teaspoon of black pepper.
  • ½ teaspoon of salt.
  • ½ teaspoon of paprika.
  • ½ teaspoon of dried coriander.

Preparation Method

Step 1: Prepare the Kofta

  1. In a mixing bowl, combine the minced meat, parsley, breadcrumbs, and chopped onion.
  2. Season with salt, black pepper, paprika, cinnamon, and meat spices. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the mixture into finger-like kofta shapes and skewer them onto wooden kebab sticks.
  4. Place the skewers onto a baking tray lined with parchment paper and greased with a small amount of butter or ghee.
  5. Refrigerate the tray for about 30 minutes to allow the kofta to firm up.

Step 2: Cook the Kofta

  1. Preheat the oven to 180°C (356°F). Once heated, place the tray in the oven.

Step 3: Prepare the Glazed Sauce

  1. In a small bowl, mix the tomato paste, melted butter or ghee, black pepper, salt, paprika, and dried coriander. Stir until smooth and well combined.

Step 4: Glaze the Kofta

  1. After 10 minutes of cooking, remove the kofta from the oven and brush generously with the sauce. Return the tray to the oven.
  2. Repeat the glazing process multiple times until the kofta is fully cooked and has absorbed the sauce. For the final glaze, brush the kofta one more time before removing it from the oven.

Step 5: Add a Smoky Flavor

  1. Place a lit charcoal piece in the center of the kofta tray. Add a small piece of butter on top of the charcoal and quickly cover the tray to trap the smoky flavor. Leave it covered for a few minutes.
