  • 6 teaspoons olive oil
  • 2 medium onions, thinly sliced
  • 3 medium tomatoes, peeled and mashed

  • 1 teaspoon salt
  • 1/4 cup chopped parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cardamom
  • Juice of 1/2 lemon

For the Rice:

  • 2 cups washed and drained rice
  • 2 cups water
  • 1 tablespoon vegetable oil

For the Saffron Mixture:

  • 1 teaspoon saffron
  • 2 tablespoons rose water
  • 1/2 teaspoon ground cardamom

For the Machboos Assembly:

  • 1 teaspoon paprika
  • 2 green chilies, finely chopped
  • 1 tablespoon vegetable oil

For Garnishing:

  • Crispy potato chips (optional, as desired)

How to Prepare Machboos Tuna:

Prepare the Rice:

  1. Heat the vegetable oil in a suitable pot over medium heat. Add the rice and stir for a minute.
  2. Pour in the water, cover the pot, and let the rice cook until tender.

Prepare the Saffron Mixture:

  1. Combine saffron, rose water, and cardamom in a small bowl. Stir well and set aside.

Prepare the Tuna Mixture:

  1. Heat olive oil in a pan over medium heat. Add onions and sauté until soft.
  2. Add minced garlic and stir briefly.
  3. In a separate pan, cook the mashed tomatoes over low heat until they start to boil, then add them to the onion and garlic mixture.
  4. Add parsley, cumin, turmeric, paprika, cinnamon, coriander, and cardamom. Mix thoroughly.
  5. Pour in lemon juice and stir in the tuna. Let the mixture simmer for 10 minutes to blend the flavors.

Assemble the Machboos:

  1. In a new pot, spread vegetable oil at the bottom. Layer half the cooked rice evenly at the base.
  2. Spread the tuna mixture over the rice, followed by the remaining rice on top.
  3. Pour the saffron mixture over the rice, then sprinkle with paprika and green chilies.
  4. Cover and let the dish steam over low heat for 10 minutes.
