Mexicano Chicken – Recipe and Preparation Method

  • 1 kilogram of chicken thigh or breast (as preferred)
  • 1 teaspoon of salt
  • 1 teaspoon of curry powder
  • ½ teaspoon of black pepper
  • ¼ teaspoon of white pepper
  • ¼ teaspoon of ground cinnamon
  • 1 tablespoon of white vinegar
  • ¼ teaspoon of powdered ginger
  • 1 red bell pepper, sliced thinly
  • 1 green bell pepper, sliced thinly
  • 1 medium onion, sliced
  • 2 cups of sliced mushrooms

Preparation Method for Mexicano Chicken:

  1. Cut the chicken into small pieces and place them in a bowl. Add the curry powder, black pepper, salt, cinnamon, white pepper, and ginger. Mix well to coat the chicken thoroughly.
  2. Add the white vinegar to the seasoned chicken and mix again. Allow the chicken to marinate for 1-2 hours.
  3. In a medium pan over medium heat, add a little oil and sauté the sliced onions, stirring occasionally until softened.
  4. Lower the heat and add the marinated chicken pieces, stirring occasionally until the chicken is nearly cooked.
  5. Add the sliced mushrooms and stir until they are cooked through.
  6. Finally, add the red and green bell pepper slices and cook until softened.
