Mexicano Chicken – Recipe and Preparation Method

Ingredients for Mexicano Chicken:
- 1 kilogram of chicken thigh or breast (as preferred)
- 1 teaspoon of salt
- 1 teaspoon of curry powder
- ½ teaspoon of black pepper
- ¼ teaspoon of white pepper
- ¼ teaspoon of ground cinnamon
- 1 tablespoon of white vinegar
- ¼ teaspoon of powdered ginger
- 1 red bell pepper, sliced thinly
- 1 green bell pepper, sliced thinly
- 1 medium onion, sliced
- 2 cups of sliced mushrooms
Preparation Method for Mexicano Chicken:
- Cut the chicken into small pieces and place them in a bowl. Add the curry powder, black pepper, salt, cinnamon, white pepper, and ginger. Mix well to coat the chicken thoroughly.
- Add the white vinegar to the seasoned chicken and mix again. Allow the chicken to marinate for 1-2 hours.
- In a medium pan over medium heat, add a little oil and sauté the sliced onions, stirring occasionally until softened.
- Lower the heat and add the marinated chicken pieces, stirring occasionally until the chicken is nearly cooked.
- Add the sliced mushrooms and stir until they are cooked through.
- Finally, add the red and green bell pepper slices and cook until softened.
