For the Couscous:

  • 200 grams of couscous.
  • 400 ml of vegetable broth.
  • 1 teaspoon of turmeric.
  • 1 teaspoon of curry powder.
  • 2 tablespoons of olive oil.
  • 1 medium onion, finely chopped.
  • 1 red bell pepper, diced.
  • ½ teaspoon of red chili flakes.

For the Shrimp:

  • 100 grams of shrimp.
  • Water, for boiling.

For the Mussels:

  • 100 grams of mussels.
  • ¼ cup of vinegar.
  • Salt, to taste.

For the Fish Fillets:

  • 3 fish fillets.
  • 3 tablespoons of oil.
  • Salt and black pepper, to taste.

Preparation Method

Step 1: Prepare the Fish

  1. Lightly oil a baking tray and place the fish fillets inside.
  2. Season with salt and black pepper.
  3. Preheat the oven to 180°C (356°F). Once preheated, bake the fish until cooked through. Set aside.

Step 2: Cook the Shrimp

  1. Boil water in a suitable pot and cook the shrimp until tender. Drain and set aside.

Step 3: Prepare the Mussels

  1. In a pot, combine vinegar, salt, and water over medium heat. Add the mussels and cover the pot.
  2. Cook until the mussels open and are fully cooked. Remove from heat and set aside.

Step 4: Cook the Couscous

  1. Heat olive oil in a pot over medium heat. Add the chopped onion and diced red bell pepper. Sauté until the onion becomes translucent.
  2. Add the couscous, turmeric, curry powder, red chili flakes, and a pinch of salt. Stir until the couscous begins to change color slightly.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer until the couscous is fully cooked and fluffy.

Step 5: Assemble and Serve

  1. Spread the cooked couscous on the bottom of a serving platter.
  2. Arrange the shrimp, mussels, and fish fillets on top for a beautiful presentation.
