Seafood Paella – Recipe and Preparation Method

Ingredients for Seafood Paella
- 12 mussels, soaked in cold water.
- 300 grams of shrimp.
- 100 grams of squid, cut into rings.
- 100 grams of white fish fillet, cut into cubes.
- 100 grams of sausage, sliced into rounds.
- 2 medium-sized onions, finely chopped.
- 4 garlic cloves, minced.
- 1 medium-sized tomato, chopped.
- 1 red bell pepper, sliced.
- 1 cup of green peas.
- 2 cups of rice.
- ¼ teaspoon of saffron.
- 2 cups of chicken broth.
- 1 tablespoon of apple cider vinegar.
- 2 tablespoons of chopped parsley.
- Salt, to taste.
- Black pepper, to taste.
- ½ cup of olive oil.
Preparation Method
Step 1: Cook the Squid and Fish
- Heat a small amount of olive oil in a suitable pan. Add the squid rings and fish fillet cubes. Cook until done, then remove from the pan and set aside.
Step 2: Cook the Sausage
- In another pan, heat a little olive oil and lightly brown the sausage slices. Remove and set aside.
Step 3: Sauté the Onions and Mussels
- In the same pan, add the remaining olive oil and sauté the chopped onions until slightly softened. Add the mussels and stir for about 2 minutes.
Step 4: Combine the Seafood
- Add the cooked squid, fish fillets, and shrimp to the pan with the onions and mussels. Stir occasionally to combine the flavors.
Step 5: Add Vegetables and Seasonings
- After 5 minutes, add the peas, chopped tomato, and browned sausage slices. Season with salt and black pepper. Stir all the ingredients together until well combined.
Step 6: Cook the Rice
- Add the rice to the pan and reduce the heat to low.
- Mix the saffron with ½ cup of chicken broth, then pour the mixture over the rice. Add the remaining chicken broth to the pan. Cover and cook on low heat until the rice and other ingredients are fully cooked.
Final Step: Garnish and Serve
- Once cooked, transfer the paella to a serving dish. Sprinkle chopped parsley on top for garnish.
