For the Cake:

  • 250 grams of white flour.
  • 4 eggs.
  • 1 teaspoon of vanilla extract.
  • 35 ml of liquid milk.
  • 150 grams of white sugar.
  • 1 tablespoon of tahini (for greasing the pan).

For the Strawberry Mixture:

  • 350 grams of strawberries.
  • 2 tablespoons of white sugar.
  • 1 egg yolk.
  • 1 teaspoon of vanilla extract.
  • 100 ml of liquid milk.
  • 250 grams of cream.
  • Gelatin, as needed.

For Garnishing:

  • 1 packet of biscuits.
  • 2 cups of strawberry sauce.
  • 800 grams of strawberries, washed and halved.

Preparation Method

Step 1: Prepare the Biscuits

  1. Dip the biscuits into the strawberry sauce and set them aside.

Step 2: Prepare the Cake

  1. Grease a cake mold with tahini and set it aside.
  2. In a mixer, combine the eggs, vanilla extract, and sugar. Beat until the mixture becomes thick and frothy.
  3. Gradually add the flour while mixing, then slowly pour in the milk, continuing to whisk for about a minute.
  4. Pour the batter into the prepared cake mold and bake in a preheated oven at 180°C (356°F) for approximately 35 minutes, or until the cake is fully baked.
  5. Remove from the oven and let the cake cool.

Step 3: Prepare the Strawberry Mixture

  1. Blend the strawberries in a blender until smooth.
  2. In a pot over medium heat, combine the egg yolk, sugar, and vanilla extract. Add the strawberry puree and mix well.
  3. Stir in the milk and gelatin, ensuring the gelatin dissolves completely. Remove from heat and let the mixture cool.
  4. Whip the cream in a separate bowl and fold it into the cooled strawberry mixture.

Step 4: Assemble the Charlotte Cake

  1. Arrange the dipped biscuits around the edges of a Charlotte mold.
  2. Slice the cake horizontally into two layers. Place the first layer at the bottom of the mold.
  3. Spread a generous amount of the strawberry mixture on top of the first cake layer, followed by a layer of halved strawberries.
  4. Place the second cake layer on top, and pour the remaining strawberry mixture over it.

Step 5: Garnish and Chill

  1. Decorate the top with the remaining strawberry halves.
  2. Refrigerate the cake for at least 3 hours to set.
