Vegetable Cake – Recipe and Preparation Method

Ingredients for Vegetable Cake:
- 1 medium-sized onion, finely chopped.
- 1 clove of garlic, minced.
- 1 tablespoon of olive oil.
- 100 grams of sun-dried tomatoes, finely chopped.
- 100 grams of green olives, pitted and sliced.
- 100 grams of black olives, pitted and sliced.
- 50 grams of Italian herbs.
- 4 eggs at room temperature.
- 250 grams of whole wheat flour.
- 1 teaspoon of salt.
- 1 tablespoon of baking powder.
- 100 ml of liquid milk.
Preparation Method:
Sauté the base ingredients:
Heat the olive oil in a suitable pan over medium heat. Add the minced garlic and finely chopped onion, stirring occasionally until softened.Mix the vegetables:
Add the green and black olive slices, Italian herbs, and sun-dried tomatoes to the pan. Stir all the ingredients well until combined, then remove the pan from the heat and set the mixture aside.Prepare the dry ingredients:
In a mixing bowl, combine the salt, whole wheat flour, and baking powder. Mix thoroughly to ensure the dry ingredients are well blended.Prepare the wet ingredients:
In an electric mixer, beat the eggs thoroughly. Gradually add the milk and half of the dry ingredient mixture, mixing at a low speed.Combine the mixtures:
Add half of the vegetable mixture to the remaining dry ingredients and mix them together. Then, fold the resulting mixture into the batter gently.Prepare the cake pan:
Grease a cake pan with butter and sprinkle it lightly with flour. Pour the cake batter into the pan, then evenly spread the remaining half of the vegetable mixture on top.Bake the cake:
Preheat the oven to 200°C (392°F). Once the oven reaches the desired temperature, place the cake pan inside and bake for 30–40 minutes, or until fully cooked.Cool and serve:
