Fattet Al-Muqadam – Recipe & Cooking Instructions

Fattet Al-Muqadam is one of the most delicious and savory main dishes, traditionally served with chickpeas and yogurt. This popular dish is enjoyed throughout many Arab countries and is especially common during Ramadan, when it features prominently at both iftar and suhoor due to its wholesome and nutritious ingredients.


Ingredients

Fattet Al-Muqadam

 

  • 8 pieces of lamb muqadam
  • 3 medium-sized pieces of ginger
  • A handful of bay leaves
  • 1 medium onion, cut into several pieces
  • 1/4 block of melted butter
  • Hot red pepper (to taste)
  • 4 pieces of misk
  • 10 cups of water (approximately 2.5 liters)
  • 1/4 cup olive oil
  • 6 cloves of crushed garlic
  • 2 cups of boiled chickpeas
  • 3 cups of fermented yogurt
  • 1.5 cups of tahini
  • An ample amount of toasted bread, cut into evenly sized, medium pieces

Preparation Method

  1. Cleaning the Muqadam:

    • Thoroughly clean the lamb muqadam pieces.
    • Quickly pass them over a high flame to burn off any remaining hair.
    • Rinse them several times with cold water and salt. Rub lightly with a bit of vinegar, then wash well with water.
  2. Boiling the Muqadam:

    • Place the cleaned pieces in a deep pot and add enough water to cover them.
    • Bring the water to a boil over medium heat and let it simmer for 15 minutes. Discard this water.
    • Refill the pot with fresh water, add the misk, bay leaves, and ginger pieces, and bring to a simmer over medium heat.
    • Let the muqadam pieces cook for about 1.5 hours until tender.
  3. Processing the Meat:

    • Once cooked, remove the pot from the heat.
    • Transfer the muqadam pieces to another bowl and separate the meat from the bones, reserving the broth by sealing the original pot tightly.
  4. Frying the Meat:

    • Heat a suitable pot with some olive oil over low heat.
    • Add the separated meat pieces and fry them, stirring occasionally until well browned.
    • Add a little bit of the reserved muqadam broth to enhance the flavor.
  5. Assembling the Dish:

    • Arrange the toasted bread pieces evenly in a serving dish.
    • Spread a layer of the fried meat over the bread.
  6. Preparing the Yogurt Mixture:

    • In a deep bowl, combine the fermented yogurt with the tahini, crushed garlic, and boiled chickpeas.
    • Stir thoroughly until the mixture is smooth and cohesive.
    • Pour this yogurt mixture evenly over the meat and bread in the serving dish.
  7. Final Garnish:

    • In a small pan, melt the butter over low heat.
    • Add peeled almonds and sauté until they are nicely toasted.
    • Drizzle the melted butter and toasted nuts (almonds and pine nuts) over the assembled dish for a delightful finishing touch.
