Mutabbala with Wheat and Yogurt
Mutabbala with wheat and yogurt is one of the most delectable dishes—easy to prepare, bursting with flavor, and wonderfully appetizing.
This dish is not only delicious but also highly nutritious. Its ingredients provide many essential nutrients such as protein, starch, vitamins, and minerals like iron, phosphorus, and zinc.
Ingredients
- 1 kg of de-hulled wheat
- 500 grams of de-hulled corn
- 500 grams of chickpeas
- 3 kg of fermented yogurt (laban)
- 3 tablespoons of salt
- An appropriate amount of water
Preparation Method
Pre-Preparation (One Day Ahead):
Chickpeas:
- Rinse the chickpeas thoroughly to remove any dirt or small stones.
- Place them in a deep bowl and wash several times with cold water.
- Submerge the chickpeas in warm water and add 1 teaspoon of sodium carbonate powder.
- Seal the bowl tightly and let them soak for 24 hours.
Wheat:
- Spread the wheat on a flat surface and remove any dirt or stones.
- Transfer the wheat to a deep bowl and wash it repeatedly with cold water until completely clean.
- Submerge the wheat in warm water, seal the container tightly, and let it soak for a full day.
Corn:
- Follow the same process as the wheat.
- Soak the corn for 12 hours until it is well hydrated.
Cooking Day:
Combine and Cook:
- Rinse the chickpeas, corn, and wheat thoroughly.
- Place all three ingredients in a deep cooking pot.
- Cover the ingredients with water and add the salt.
- Heat the pot on a low flame until it starts to boil. Then, reduce the heat significantly, cover the pot, and let the mixture simmer for one hour, or until the grains are fully cooked.
Adding the Yogurt:
- Once the mixture is cooked, gradually add the fermented yogurt in successive portions.
- Stir continuously to ensure the yogurt blends well with the grains and legumes.
Finishing Touch:
- Pour the finished mutabbala into several deep or medium-sized serving dishes.
- Allow the dishes to cool completely before serving.
- Serve chilled alongside your favorite accompaniments.
