Ingredients
- 8 eggs
- Zest of 1 lemon
- 2 cups of sugar
- 2 tablespoons of vanilla extract
- 4 cups of flour
- 2 tablespoons of baking powder
- 1 cup of warm milk
- 1 cup of fresh lemon juice
- 1 cup of seedless raisins
- 1 cup of chopped walnuts, almonds, and hazelnuts
- 1 teaspoon of white vinegar
Preparation Method
Mixing the Wet Ingredients:
- In a stand mixer or using a hand mixer, add the eggs and lemon zest. Whisk well for about 10 minutes.
- Gradually add the sugar and vanilla extract while continuously mixing.
Adding Liquids and Dry Ingredients:
- Add half of the lemon juice and the vegetable oil to the mixture.
- Add a little bit of flour and baking powder, alternating with the milk and remaining lemon juice. Continue mixing until smooth and well combined.
Checking the Consistency:
- Once all the flour is added, check the batter’s consistency—it should be smooth and have a consistency similar to thick yogurt.
Preparing the Cake Pan:
- Preheat the oven to 180°C (350°F).
- Prepare your cake pan by greasing it with butter or lining the bottom with parchment paper.
Incorporating the Nuts and Raisins:
- Lightly toss the nuts and raisins in a little flour to prevent them from sinking during baking.
- Gently fold the nuts and raisins into the batter using a spatula, ensuring that the batter is well aerated.
Baking the Cake:
- Pour the batter into the prepared cake pan.
- Sprinkle the remaining nuts and raisins evenly over the top of the batter.
- Place the cake in the oven and bake for about 45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Checking Doneness:
- After 45 minutes, insert a thin skewer or toothpick into the center of the cake. If it comes out clean, the cake is done.
Cooling and Serving:
- Remove the cake from the oven and allow it to cool on a wire rack.
- Once the cake is completely cool, transfer it to a serving plate.
Enjoy this delicious, moist nut and raisin cake as a perfect dessert for your family or guests!
