Preparation Method

  1. Mixing the Wet Ingredients:

    • In a stand mixer or using a hand mixer, add the eggs and lemon zest. Whisk well for about 10 minutes.
    • Gradually add the sugar and vanilla extract while continuously mixing.
  2. Adding Liquids and Dry Ingredients:

    • Add half of the lemon juice and the vegetable oil to the mixture.
    • Add a little bit of flour and baking powder, alternating with the milk and remaining lemon juice. Continue mixing until smooth and well combined.
  3. Checking the Consistency:

    • Once all the flour is added, check the batter’s consistency—it should be smooth and have a consistency similar to thick yogurt.
  4. Preparing the Cake Pan:

    • Preheat the oven to 180°C (350°F).
    • Prepare your cake pan by greasing it with butter or lining the bottom with parchment paper.
  5. Incorporating the Nuts and Raisins:

    • Lightly toss the nuts and raisins in a little flour to prevent them from sinking during baking.
    • Gently fold the nuts and raisins into the batter using a spatula, ensuring that the batter is well aerated.
  6. Baking the Cake:
