Chicken Machboos – Recipe for Chicken Machboos – How to Make Chicken Machboos

Chicken Machboos is one of the most popular dishes across the Gulf Arab countries. It can be prepared with chicken, fish, or meat, all of which have an incredibly delicious flavor and are packed with high nutritional value.   • 1 kilogram of chicken breast, cut into pieces
  • 2 cups of finely chopped onions
  • 3 cloves of minced garlic
  • 1 teaspoon of ground ginger
  • 2 cups of chopped tomatoes
  • 1/2 cup of chopped cilantro
  • 1 red bell pepper, cut into cubes
  • 1 teaspoon of curry powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground dried lime (loomi)
  • 1/2 teaspoon of ground cardamom
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground red chili powder
  • 3 cups of chicken broth
  • 1 green bell pepper, cut in half
  • 1 dried lime (whole)
  • 3 cups of drinking water
  • 2 cups of basmati rice, washed and drained

How to Prepare Chicken Machboos:

  1. Heat a little oil in a suitable pot and sauté the chopped onions until they soften. Add the chicken breast pieces and stir until the chicken changes color.
  2. Add the minced garlic, chopped tomatoes, ground ginger, chopped cilantro, and red bell pepper. Mix all the ingredients well with the chicken and cook for 1 minute.
  3. Add the cumin, curry powder, ground loomi, turmeric, ground cardamom, ground red chili powder, and cinnamon. Stir the ingredients well to combine, then lower the heat and cover the pot.
  4. After 10 minutes, add the green bell pepper halves and the whole dried lime, then pour in the drinking water. Let the mixture simmer for about 30 minutes.
  5. Drain the mixture from the broth and transfer it to another pot. Add the basmati rice on top of the mixture, then pour the broth back in and mix everything together.
  6. Let the mixture simmer on low heat for about 20 minutes until all the ingredients are cooked and the chicken machboos is ready.
  7. Transfer the machboos to a serving platter and serve it hot to your family or guests to enjoy its delicious taste.
