Ingredients for Roast Turkey:

Roast Turkey in the Oven

  • 1 medium-sized whole turkey

  • 3 tablespoons of black pepper

  • 2 tablespoons of white pepper

  • 1 cup of apple cider vinegar

  • 1 cup of lemon juice

  • Salt to taste

  • 2 green bell peppers

  • 2 red bell peppers

  • 2 tablespoons of mixed spices

  • Lemon zest

  • 1 teaspoon of ground cardamom

  • 1 teaspoon of ground cinnamon

  • 1 teaspoon of black pepper

  • 1 large onion

  • 6 cloves of crushed garlic

  • ¼ cup of olive oil

  • 2 tablespoons of ghee (or butter)

  • ½ cup of raisins

  • 1 cup of almonds

  • 1 teaspoon of ground cumin

  • 1 teaspoon of ground coriander

  • 2 yellow bell peppers

  • 1 teaspoon of ground nutmeg

  • 2 whole dried limes (loomi)

  • 1 teaspoon of ground dried lime (loomi powder)

  • 6 carrots, peeled and chopped

How to Prepare Roast Turkey in the Oven:

  1. Clean the Turkey:
Wash the turkey thoroughly and make deep slits into the meat using a sharp knife. These slits will help absorb the seasoning.

  2. Prepare the Marinade:
    In a bowl, combine:

    • Ground dried lime, nutmeg, cumin, lemon zest, coriander, black and white pepper, apple cider vinegar, lemon juice, ground cardamom, mixed spices, and crushed garlic.
      Mix everything well.

  3. Marinate the Turkey:
Rub the marinade all over the turkey, including into the slits and inside the cavity.
Let the turkey soak in the flavors for at least 3 hours in the refrigerator.

  4. Prepare the Filling:
Slice the onion into wedges and sauté in a pan over low heat with a bit of oil until soft and golden.
Add 2 tablespoons of mixed spices and 2 whole dried limes. Stir until the onions are fragrant.
Add chopped bell peppers (red, green, and yellow), chopped carrots, and a bit more crushed garlic.
Allow the vegetables to soak up the spice mixture well.
This will serve as the stuffing for the turkey.

  5. Stuff the Turkey:
Fill the turkey cavity with the sautéed vegetable mixture.
Brush the outside of the turkey with olive oil.
Place it in a baking dish or roasting pan and loosely cover it with foil.

  6. Bake the Turkey:
Preheat the oven to 225°C (437°F).
Roast the turkey for 1 hour, then reduce the temperature to 180°C (356°F) and continue baking for 2 more hours, or until fully cooked and golden.

  7. Serve:
Once done, remove the turkey from the oven and transfer it to a serving platter.
Garnish with toasted almonds and pine nuts, fresh lemon slices, and colorful vegetables on the side.

Serve hot with your favorite salad or side dish for a beautiful, festive meal.

Enjoy your meal and good health!
