Sponge Cake – Recipe and Preparation Method
Sponge cake is one of the easiest and most widespread desserts around the world. It doesn’t require much time to prepare — it's quick, simple, and anyone can make it successfully.
Ingredients for Sponge Cake:

6 eggs

1 cup of sugar

1 tablespoon of vanilla extract

1 tablespoon of baking powder

1/4 cup of vegetable oil

2 cups of all-purpose flour

1/2 cup of lemon or orange juice
-
A little lemon zest
How to Prepare Sponge Cake:
First, sift the flour several times to ensure it’s light and airy.
Preheat the oven to 180°C (about 350°F).
Prepare the cake pan by either lining it with parchment paper or greasing it thoroughly with butter or oil and dusting it evenly with flour.
In a mixing bowl, place the eggs, lemon zest, and vanilla, and begin beating them with an electric mixer.
Gradually add the sugar while continuing to beat, until the mixture becomes very light, fluffy, and pale yellow — this process should take about 12 minutes for best results.
Next, gradually add the sifted flour and baking powder while mixing continuously. At the same time, slowly incorporate the lemon or orange juice and vegetable oil.
Continue beating the mixture for another 15 minutes to achieve a smooth, fluffy batter.
Once done, stop the electric mixer and switch to a manual whisk or spatula. Gently fold the batter by hand, using upward strokes from the bottom to the top to maintain the airiness.
Pour the batter into the prepared cake pan, smoothing the top gently.
Place the pan in the preheated oven, ensuring the oven door stays closed during baking. Bake for about 30 minutes.
After about half an hour, once the edges of the cake turn a light golden color, check for doneness by inserting a thin wooden skewer or toothpick into the center of the cake. If it comes out clean, the cake is perfectly baked. If it comes out with batter on it, bake for a few more minutes.
Once fully baked and a golden pinkish color appears on the surface, remove the cake from the oven and place it on a wire rack to cool completely.
Finally, transfer the sponge cake to a serving platter and it’s ready to enjoy.
