Cake Batter:

How to Prepare the Lotus Biscoff Cake:

  1. Prepare the filling:
    In a bowl, crush the Lotus biscuits and mix them with cocoa powder, cinnamon, brown sugar, and butter. Stir thoroughly until the mixture is well combined, then set aside.

  2. Sift dry ingredients:
    In another bowl, sift together the flour, baking soda, and baking powder. Set aside.

  3. Whisk wet ingredients:
    In a mixing bowl, combine the eggs, vanilla, salt, and vinegar. Whisk until well blended.
    Gradually add the sugar and continue mixing until the mixture turns creamy.
    Pour in the oil and blend with an electric mixer until smooth.
