Beef Enchiladas – Recipe & Cooking Method

Carne Enchiladas (Mexican-Style)

Beef enchiladas are a classic of Mexican cuisine and one of the country’s most beloved comfort foods. Their hearty filling, spicy tomato sauce, and blanket of melted cheese have earned them worldwide fame—and plenty of repeat requests at family dinners.


Ingredients (Serves 8)

Beef Enchiladas

 

For the enchiladas

  • 16 medium flour tortillas

Beef filling

  • 700 g (1 ½ lb) ground beef

  • 2 medium onions, finely chopped

  • ½ tsp black pepper

  • 1 tsp mixed spice or all-purpose seasoning

  • 1 tsp chili powder (adjust to taste)

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • 1 ½ tsp salt

  • 2 Tbsp oil (for browning)

Red enchilada sauce

  • 5 ripe tomatoes, crushed or blended

  • 3 garlic cloves, minced

  • ½ tsp black pepper

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tsp chili powder

  • ½ tsp onion powder

  • 2 Tbsp tomato paste

  • ½ cup water

Topping & garnish

  • 2 cups grated Cheddar

  • 1 cup grated Mozzarella

  • 5 scallions (spring onions), finely sliced


Method

  1. Make the beef filling

    • Heat the oil in a wide pan over medium-high heat. Add the ground beef and cook, breaking it up, until evenly browned.

    • Stir in the onions, pepper, mixed spice, chili powder, cumin, coriander, and salt. Cook for another 5 minutes, or until the onions soften and the spices are fragrant. Remove from heat.

  2. Prepare the enchilada sauce

    • In a saucepan, combine all sauce ingredients: tomatoes, garlic, pepper, cumin, coriander, sugar, salt, chili powder, onion powder, tomato paste, and water.

    • Bring to a boil, then reduce heat and let the sauce simmer for about 15 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning.

  3. Assemble the baking dish

    • Mix the Cheddar and Mozzarella in a bowl.

    • Spread about ½ cup of the warm sauce over the bottom of a lightly greased baking dish (roughly 33 × 23 cm / 13 × 9 in).

  4. Fill and roll

    • Lay a tortilla on a clean surface. Spoon a line of beef filling down the centre, sprinkle with a little cheese blend and some sliced scallions, then roll it up snugly.

    • Place seam-side down in the baking dish. Repeat with the remaining tortillas and filling.

  5. Top & bake

    • Pour the rest of the sauce evenly over the rolled tortillas. Scatter the remaining cheese mixture on top.

    • Bake in a preheated oven at 190 °C / 375 °F for about 20 minutes, or until the cheese is bubbling and golden.

  6. Serve

    • Let the enchiladas stand for five minutes, then garnish with extra scallions. Serve hot—and enjoy the rich, spicy warmth of this Mexican favourite with family or friends.
