Ingredients for Chicken Fajitas (serves eight people):

450 grams skinless, boneless chicken breasts, sliced

⅓ cup coarsely chopped fresh coriander

How to Cook Chicken Fajitas:
First, in a large bowl, combine the vegetable oil, chopped coriander, minced garlic, crushed red pepper, lemon juice, and cumin. Stir until the ingredients are well mixed.
Add the sliced chicken breasts to the bowl and toss until fully coated in the marinade. Cover the bowl and refrigerate for 24 hours to let the flavors infuse.
After marinating, remove the chicken from the fridge. Heat a skillet over medium heat, add the marinated chicken, season with salt and black pepper, and cook, stirring occasionally, until the chicken is nearly cooked through.
Remove the chicken from the skillet and set aside in a separate bowl. Add an extra tablespoon of vegetable oil to the skillet if needed, then add the sliced red and yellow bell peppers. Sauté until they begin to soften.
