Lamb couscous is a delicious, hearty dish from North African cuisine, known for its rich flavor and high nutritional value.

The word couscous comes from the Amazigh language and refers to the way the small grains of the dish are prepared.

This dish is a traditional staple in the Maghreb region of North Africa. It’s highly nutritious: every 100 grams provide about 112 calories, 3.8 grams of protein, 58 mg of potassium, and 23 grams of carbohydrates.

Ingredients for Lamb Couscous (serves eight people):

Lamb Couscous

 

  • ¾ cup cooked chickpeas

  • 3 cloves garlic, minced

  • 1 cinnamon stick

  • 1 tablespoon minced ginger

  • 2 tablespoons vegetable oil

  • 1.5 kilograms lamb, cut into medium cubes

  • Salt to taste

  • 1 cup tomato paste

  • Black pepper to taste

  • 1 onion, finely chopped

  • 5 tablespoons ras el hanout spice blend

  • 2½ cups chicken broth

For garnish:

  • 8 hard-boiled eggs

For the couscous:

  • 2 cups couscous

  • 2 cups boiling water

  • Salt to taste

  • 2 teaspoons vegetable oil

How to Cook Lamb Couscous:

First, place the lamb cubes in a bowl, season with salt and black pepper, and toss until well coated.

Heat vegetable oil in a large pot over medium-high heat. Add the lamb and sauté until browned on all sides, then remove the meat from the pot. In the same pot, add the chopped onion, salt, and black pepper. Sauté until the onion softens, then add the minced garlic, ras el hanout, and ginger, stirring until fragrant.

Add the tomato paste and return the lamb to the pot. Stir well, then pour in the chicken broth and bring the mixture to a boil.

Reduce the heat to low, cover the pot, and simmer for about 1½ hours, or until the lamb is tender.

Add the cooked chickpeas and simmer for another 10 minutes.

Meanwhile, prepare the couscous by placing it in a large bowl, pouring over the boiling water, adding a pinch of salt, and covering for 5 minutes. Fluff the couscous with a fork, then drizzle with vegetable oil and mix gently.

To serve, spoon the couscous onto a large serving platter, arrange the lamb and sauce beside it, and garnish with the hard-boiled eggs. Present this flavorful dish to your family and enjoy the delicious taste of traditional North African cuisine.
