Ingredients for Chicken Zurbian (serves five):

Chicken Zurbian

 

  • 1 cup brown rice

  • 2 tablespoons oil

  • 2 cinnamon sticks

  • 2 whole cloves

  • 2 cardamom pods

  • 2 red onions, sliced

  • ½ teaspoon ground black pepper

  • 2 cloves garlic, minced

  • 1 teaspoon grated ginger

  • 5 chicken breasts

  • ½ kg (about 1 lb) tomatoes, finely chopped

  • 2 tablespoons milk

  • 1 tablespoon saffron

  • 1 teaspoon turmeric

  • 2 cups plain yogurt

  • 1 tablespoon almonds, for garnish

How to Make Chicken Zurbian:

First, soak the rice in water. Then cook it in a pot with a little oil and enough water, covering the pot until the rice is fully cooked.

In a separate large pot, heat the oil over medium heat. Add the cloves, cinnamon sticks, and cardamom pods, stirring until fragrant.

Add the sliced onions to the pot and sauté until they soften. Then add the black pepper, garlic, ginger, and chicken breasts, continuing to stir until the chicken is cooked through.

Once the chicken is done, add the chopped tomatoes and mix well until fully combined.

In another small pot, bring the milk to a boil, then add the saffron. Remove from heat and allow it to cool slightly.

When cooled, add the turmeric and yogurt to the milk-saffron mixture, stirring until well combined.

Pour this mixture over the chicken and tomato sauce in the pot. Stir everything together and let it simmer for about 20 minutes so the flavors meld.

To serve, place the cooked rice on a large serving platter, top it with the chicken and sauce, and garnish with the almonds.

Serve immediately so your family can enjoy the rich and delicious flavors of this traditional dish.
