Dawood Basha Kofta – Recipe – How to Cook Dawood Basha Kofta

Dawood Basha Kofta is a popular dish across the Arab world, especially in Egypt and the Levant. Its origins trace back to Turkish cuisine, and it is said that the Ottoman governor Dawood Basha was the one who introduced it to Egypt.

According to historical anecdotes, Dawood Basha was a great lover of kofta. One time, his cook failed to prepare it properly, and the governor punished him. Since then, the dish became associated with his name. Later, when he arrived in Egypt, he ordered his cooks to prepare it regularly. The Egyptians became familiar with it, and from there it spread across the Arab world.

Ingredients (Serves 4)

Dawood Basha Kofta

 

For the meat mixture:

  • 500 g minced meat (fine ground kofta mix)

  • 1 teaspoon mixed spices

  • 1 tablespoon olive oil

  • A small amount of dried mint, ground

  • 1 teaspoon salt

For the sauce:

  • 2 potatoes, peeled and cut into cubes

  • Vegetable oil (for frying)

  • 5 tomatoes, peeled and finely chopped

  • 1 chicken bouillon cube

  • Water (as needed)

  • 2 tablespoons tomato paste

  • 1 teaspoon mixed spices

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • A small amount of dried mint, ground


Preparation

  1. Prepare the meat: In a bowl, mix the minced meat with spices, olive oil, dried mint, and salt. Combine well, then shape the mixture into medium-sized round balls.

  2. Place the meatballs on a tray and put them in a preheated oven for about 3 minutes, just enough to firm them up. Remove and set aside.

  3. Prepare the potatoes: Fry the cubed potatoes in hot oil until golden. Set aside.

  4. Prepare the sauce: Dissolve the chicken bouillon cube in hot water. In another pot, heat a little oil, add the chopped tomatoes, and sauté briefly. Then add the tomatoes to the broth along with tomato paste, spices, salt, and black pepper. Bring the mixture to a boil.

  5. Cook the kofta: Add the meatballs to the boiling sauce and let simmer for about 15 minutes. Then add the fried potatoes, sprinkle with dried mint, and allow everything to simmer together for another 10 minutes.

  6. Serve: Remove from heat and transfer to serving dishes. Enjoy this flavorful dish with your family.
