Iraqi Kleicha – Traditional Recipe – How to Make Iraqi Kleicha
Kleicha is one of the most beloved traditional sweets of Iraqi cuisine. Known for its rich flavor and festive presence, it is a must-have on holidays, family gatherings, and joyful occasions.
Although it is deeply rooted in Iraq, Kleicha has traveled far beyond its borders, spreading to other Arab countries, especially across the Gulf region, where it also gained popularity.
It is also considered a perfect sweet for travel and picnics, as it can be easily carried and enjoyed on the go.
The origin of the word Kleicha has different stories. One explanation says it comes from Kleisha, the wooden mold with carved patterns traditionally used to stamp the dough, giving the pastry its distinctive designs. Another theory suggests that it is derived from a Persian word meaning “cake.” A more folkloric tale tells of a stingy farmer who only allowed his children one meal a day. While he was away, his wife would secretly prepare this pastry for her children. When the father returned, she would warn them by whispering “Kuli ja abook” (Eat quickly, your father is here!). Over time, the phrase was shortened and evolved into “Kleicha.”
Ingredients
For the dough:

1 kg flour

500 g ghee or butter

1 teaspoon salt

1 tablespoon instant yeast

Milk (as needed, to form the dough)

1 tablespoon ground cardamom
For the filling:

2 cups sugar

Date paste (as desired)

A small amount of rose water

A small amount of ground walnuts
Preparation

Prepare the dough: Place the flour in a large bowl, add salt and cardamom, then rub in the ghee or butter with your hands until the mixture resembles crumbs. Make a well in the center.

Place the yeast in the well, pour in the milk gradually, and knead until a smooth dough forms. Cover and let it rise until doubled in size.

First filling (dates): Divide the dough into two parts. Roll out one half into a large circle, spread date paste over it, then roll it tightly into a cylinder. Seal the edges well. Cut the cylinder into two, roll each piece with your hands to elongate and thin it slightly, then slice into even portions.

Second filling (walnuts): Take the remaining half of the dough and divide it into small balls. Mix the walnuts with sugar and rose water. Stuff each dough ball with the walnut mixture, sealing well.

Bake: Arrange all the filled pieces (date rolls and walnut balls) on a greased baking tray. Place in a preheated oven at 200°C (390°F) and bake until golden brown.

Remove from the oven, let them cool, then serve to family and friends.
