Ras El Abed (Chocolate-Covered Semolina Balls) – Recipe and Preparation Method

Ras El Abed is a type of sweet treat known worldwide. It consists of small, round balls coated in chocolate. Because of their dark color and spherical shape, they earned this name, though in many countries they are also known by other names.

This dessert is simple to prepare, suitable for all seasons, though it is especially enjoyed in winter as it provides warmth and energy.

The origins of this sweet go back to Denmark in the 19th century—around 200 years ago. At first, it was called Kushi, meaning "the African" or "the servant," which later developed into Rosh Kushi (African head), and from there the name spread across the world in different forms.

These sweets can be filled or decorated from the outside, but they are often served plain. Thanks to their ease of preparation and quick cooking time, many families prepare them regularly for gatherings, happy occasions, and guests.


Ingredients:

Ras El Abed (Chocolate-Covered Semolina Balls)

 

  • 1 cup fine semolina

  • 1 cup sugar

  • 3 cups fresh milk

  • 2 tablespoons cocoa powder

  • Grated coconut (for decoration)


Preparation Method:

  1. In a deep pot, heat the milk over low heat until warm.

  2. Add the semolina, sugar, and cocoa powder. Stir gently until the mixture thickens and firms up completely.

  3. Once the mixture is firm, remove from heat and allow it to cool.

  4. When cooled, shape the mixture into small round balls.

  5. Roll each ball in grated coconut for decoration, or dip them into a bowl of coconut to coat them fully.

  6. Place the finished sweets on a serving plate and present them to family and guests to enjoy their soft, chocolatey flavor.

This simple yet delightful treat is especially loved by children, who often ask for it again and again.
