Sahlab – Recipe and Preparation Method
Sahlab is one of the most famous traditional hot drinks in many Arab countries, especially in Turkey, the Levant, Egypt, and the Hijaz. It takes its name from the orchid plant (Orchis mascula), from which the original powder was traditionally made.
This drink is very popular among both adults and children, particularly during the winter months. On cold mornings, schoolchildren often gather around street vendors to sip a warm cup of sahlab, bringing comfort and warmth to their bodies.
The orchid plant, known in Arabic as “Fox’s Testicles” because of the shape of its tubers, flowers in May and June. It grows wild in Iran, Cyprus, Turkey, Greece, and Morocco, with the Iranian variety considered the best.
Sahlab is not only delicious but also highly nutritious. It helps children grow, strengthens bones and teeth due to its calcium content, and protects against osteoporosis. It boosts immunity, helps treat diarrhea and hemorrhoids, stimulates blood circulation, soothes stomach ulcers, and can even stop uterine bleeding. Thanks to its aromatic oils, it also promotes relaxation and relieves stress.
This warm, creamy drink is simple to prepare and is often served at gatherings, family evenings, and festive occasions.
Ingredients (serves 5):

5 tablespoons ready-made sahlab powder

5 cups milk

3 tablespoons cornstarch

½ teaspoon orange blossom water

Cinnamon (for garnish)

Grated coconut (for garnish)

Ground pistachios (for garnish)
Preparation Method:

Place the milk and cornstarch in a pot and stir well until the cornstarch dissolves completely.

Set the mixture over medium heat, stirring constantly.

Add sugar and orange blossom water, continuing to stir for about 5 minutes until the milk thickens and becomes creamy.

Pour into cups, then sprinkle with cinnamon, coconut, and crushed pistachios.
