Syrian Karawya Dessert – Traditional Recipe – How to Make Karawya

Karawya (Caraway Pudding) is a traditional Levantine dessert, especially popular in Syria. It is usually served to guests on special occasions, and it holds a special cultural significance: families traditionally prepare it to celebrate the arrival of a newborn baby.

This dessert is centuries old, passed down from generation to generation. Besides its cultural importance, it also carries strong nutritional value. For instance, every 6.7 grams contains about 22 calories, 0.98 g of fat, 3.34 g of carbohydrates, 2.5 g of fiber, and 1.32 g of protein.

Thanks to its ingredients, Karawya is believed to have many health benefits. Ingredients:

Syrian Karawya Dessert

 

  • 6 cups water

  • 4 tablespoons finely ground rice

  • 1 tablespoon cinnamon

  • 1 tablespoon ground caraway seeds

  • 1 tablespoon ground anise seeds

  • 1 cup sugar

For garnish:

  • Grated coconut

  • Chopped pistachios (soaked, then coarsely chopped)

  • Almonds (soaked, peeled, and sliced)


Preparation:

  1. In a pot, add water, cinnamon, caraway, and anise. Place on the stove and let the mixture boil for about 30 minutes until it turns a deep brown color.

  2. Gradually add the ground rice, one spoon at a time, stirring continuously to prevent clumping. Keep stirring until the mixture thickens to a pudding-like consistency.

  3. Remove from heat and pour the mixture into glass cups.

  4. Garnish with sliced almonds, chopped pistachios, and grated coconut.

Karawya can be served warm or cold, depending on preference. Guests will enjoy its unique, rich flavor along with its comforting aroma of spices.
