Börek (Burek) – Savory Stuffed Pastries
Börek, sometimes called Burek, is a type of pastry that can be either baked in the oven or fried in oil. It is made from different types of dough and can be stuffed with a wide variety of fillings such as cheese, dates, minced meat, or vegetables.
This dish dates back to the Ottoman era, where it became widely popular. Today, it remains a favorite across the Middle East, the Balkans, and North Africa.
The dough is made with flour, salt, butter (or ghee), and baking powder, then brushed with egg and decorated with sesame seeds or nigella seeds before baking.
Ingredients

Preparation

Make sure all ingredients are at room temperature for best results.

Sift the flour, then mix it with baking powder and salt.

Add the melted ghee (still warm) and stir to combine.

Gradually add water, kneading until you form a soft, pliable dough.

Divide the dough into small portions and roll into circles.

Place your filling of choice (cheese, dates, minced meat, or vegetables) on one half of each circle.

Fold the dough over to cover the filling, sealing the edges in a crescent shape.

Arrange the pastries on a greased baking tray, leaving some space between each piece.

Beat the egg with a small pinch of vanilla and brush the tops.

Sprinkle with sesame seeds or nigella seeds.

Bake in a preheated oven at medium heat (180°C / 350°F) for 15–20 minutes, or until golden and fully cooked.
Serving
Let the börek cool slightly before serving. They are delicious warm or at room temperature, and pair perfectly with tea or milk.
