Pasta Flora – A Melt-in-Your-Mouth Jam Tart

Pasta Flora is a delightful cake-like tart that literally melts in your mouth. It’s traditionally filled with jam, and you can use any flavor you like—strawberry, apricot, or whatever you prefer.

The base dough is made from flour combined with butter (or ghee), eggs, sugar, baking powder, and vanilla. Once prepared, the dough is spread into a pan, topped with jam, and decorated with strips of dough before baking. The result is a soft yet crumbly dessert that’s perfect with coffee or tea.

Serves 4–5 people

  • 2 cups flour

  • 2 eggs

  • ¾ cup sugar

  • 1 teaspoon vanilla

  • ¾ cup butter or ghee

  • 3–4 tablespoons jam (strawberry, apricot, or your choice)

  • 1 teaspoon baking powder


Preparation

  1. Prepare the Dough

    • Beat the sugar with the butter until smooth and creamy.

    • Whisk the eggs separately to ensure freshness, then add them along with the vanilla.

    • Gradually sift in the flour mixed with baking powder.

    • Knead for about 5 minutes until a soft, pliable dough forms.

  2. Prepare the Base

    • Set aside a small piece of dough and place it in the freezer to firm up (for decoration).

    • Grease and flour a baking pan.

    • Spread the main portion of the dough evenly inside.

    • Cover the surface with jam, spreading it out smoothly.

  3. Decorate and Bake

    • Take the chilled dough and either roll it into strips to arrange in a crisscross pattern over the jam, or simply grate it with a hand grater for a rustic look.

    • Bake in a preheated oven at medium heat (180°C / 350°F) for about 25 minutes, until the top is golden brown.

  4. Serve

    • Allow to cool completely, then cut into squares.

    • Serve with a hot cup of tea or coffee.
