Ingredients

  • Whole salmon (cleaned and gutted)

  • Wild rice

  • Fresh parsley

  • Tarragon

  • Onion

  • Lemon zest

  • Leeks

  • Green garlic (or spring onions)

  • Olive oil

  • Butter

  • Chicken broth


Preparation

Step 1: Cook the Wild Rice

  • In a deep skillet, heat a little olive oil.

  • Add the wild rice, chicken broth, and water.

  • Cover and simmer over medium heat until the rice is almost cooked—leave it slightly underdone at this stage.

Step 2: Prepare the Leek Filling

  • In another pan, melt butter and sauté the leeks until soft.

  • Add the sautéed leeks to the wild rice along with tarragon, green garlic, lemon zest, and parsley.

  • Stir gently until combined—this will be the salmon stuffing.

Step 3: Prepare and Stuff the Salmon

  • Wash and clean the salmon, then carefully slice it open for stuffing.

  • Fill the cavity with the wild rice and leek mixture.

  • Tie the salmon with kitchen twine to keep the filling inside.

Step 4: Bake the Salmon

  • Preheat the oven to 200°C (390°F).

  • Grease a deep ovenproof dish with olive oil.

  • Place onion slices on the bottom of the dish to prevent the salmon from sticking.

  • Lay the stuffed salmon on top and bake for about 40 minutes, until the fish is fully cooked and tender.

Step 5: Serve

  • Once baked, squeeze fresh lemon juice over the salmon.

  • Serve hot with your choice of salad or roasted vegetables.
