Ingredients for Al-Hijazia Dough:

  • ½ kg of fine semolina (about 3 cups)
  • 2 cups of flour
  • 10 grams (1 tablespoon) of yeast
  • ½ cup of warm water
  • ½ cup of melted ghee mixed with ½ cup of oil
  • 1½ cups of yogurt
  • 1 cup of fine sugar
  • A pinch of salt

Ingredients for Al-Hijazia Filling:

  • 2 cups of semolina
  • 1 cup of fine sugar
  • 2 tablespoons of cinnamon
  • ¼ cup of warm water

Preparation Method:

  1. Mixing the Dough:

    • In a medium-sized bowl, combine the semolina, flour, sugar, and a pinch of salt.
    • Sprinkle the yeast over the dry ingredients and mix them well using a whisk to ensure all ingredients are combined.
    • Add the melted ghee and oil mixture, then pour in the yogurt and half of the warm water. Knead the mixture with your hands until the ingredients are well integrated.
    • If the dough feels dry, gradually add the remaining warm water while kneading until you achieve the correct dough consistency. The dough should not be too sticky or dry.
    • Cover the dough and let it rise for about 30 minutes while you prepare the filling.
  2. Preparing the Filling:

    • Combine the semolina, sugar, and cinnamon in a bowl. Stir with a spoon until well mixed, then gradually add the warm water to achieve the correct filling consistency.
  3. Assembling the Al-Hijazia:

    • Divide the dough into two parts, making the bottom layer slightly thicker than the top layer to ensure the base is sturdy and resistant to the oven’s heat.
    • Lightly grease the baking tray with a bit of oil, then press and spread the larger portion of the dough evenly across the bottom of the tray.
    • Spread the filling mixture over the bottom dough layer, then roll out the second portion of the dough and place it on top of the filling, covering it completely.
    • Use a fork to create decorative lines on the surface of the top dough layer.
  4. Baking the Al-Hijazia:

    • Preheat the oven to 180°C (356°F) about 10 minutes before placing the tray inside.
    • Place the tray in the middle rack of the oven and bake for 45 to 50 minutes until the top is golden and the dessert is fully cooked.
    • Once baked, cut the Al-Hijazia while it’s still hot for easier slicing.
