Preparation

Step 1: Make the Crust

  • In a bowl, cream together butter and sugar.

  • Mix in flour and sifted cocoa powder until the dough comes together.

  • Wrap the dough in plastic wrap and chill until firm.

  • Roll out on a lightly floured surface, then press into a tart pan. Chill for 10 minutes.

Step 2: Blind Bake

  • Cover the dough with parchment paper and fill with rice (to weigh it down).

  • Bake in a preheated oven for 15 minutes.

  • Remove the paper and rice, then bake for another 5 minutes until the crust is dry.

Step 3: Prepare the Caramel Layer

  • In a saucepan, combine sweetened milk, sugar syrup, and 2 tablespoons butter.

  • Stir over medium heat until thick and golden like caramel.

  • Pour into the baked crust.

Step 4: Prepare the Chocolate Layer

  • Melt chocolate with cream over hot water or in the microwave.

  • Separately, beat eggs with sugar until thick and glossy.

  • Mix vanilla into the chocolate mixture, then combine with the egg mixture.

  • Pour this over the caramel layer in the tart shell.

Step 5: Bake Again

  • Return to the oven and bake for about 15 minutes, or until the filling sets at the edges.

  • Allow to cool completely before slicing and serving.
