Al Mamoush is one of the most popular traditional dishes in Kuwait, known for its delightful taste and loved by many. This dish can be prepared in several variations, such as with chicken or shrimp, and is rich in nutritional benefits, especially proteins.

Ingredients for Kuwaiti Mamoush

  • 2 ½ cups of high-quality rice
  • 1 cup of brown lentils soaked in water
  • 2 large onions, finely chopped
  • 1 large tomato, peeled and chopped into small pieces
  • 5 small garlic cloves, finely minced
  • ½ bunch of fresh coriander, finely chopped
  • 3 tablespoons of vegetable oil
  • 2 green chili peppers
  • 1 teaspoon of ground cardamom
  • 2 teaspoons of ground dried coriander
  • 1 teaspoon of curry powder, cumin, salt, and black pepper
  • 1 Maggi cube
  • 1 dried black lemon (loomi)
  • 4 cups of water

How to Cook Kuwaiti Mamoush

  1. Begin by adding the vegetable oil to a cooking pot and heat it over medium heat until hot.

  2. Add the finely chopped onions to the pot and sauté until they turn light golden.

  3. Stir in the minced garlic and chopped tomatoes, mixing them well together.

  4. Add to the mixture salt, the Maggi cube, dried black lemon, black pepper, chopped fresh coriander, curry powder, ground coriander, green chili peppers, cumin, and ground cardamom.

  5. Stir the mixture well for about 60 seconds until everything is fully combined.

  6. Add 2 cups of water, followed by the soaked brown lentils, and mix them well. Let the mixture cook over medium heat until the lentils are half-cooked.

  7. Add the remaining water along with the rice, stirring the mixture together. Bring it to a boil.

  8. Once it starts boiling, cover the pot, reduce the heat to low, and let it simmer until the rice and lentils are fully cooked.

  9. After cooking, place the Mamoush in a serving dish and enjoy!
