  • 1 tablespoon of tomato paste

  • Vegetable oil
  • 1 bay leaf
  • 2 liters of water

  1. Begin by sautéing the lamb, onion (finely chopped), and grated garlic in a pressure cooker with 3 tablespoons of vegetable oil and a pinch of salt. Add the mixed spices and cover with water.
  2. Add the tomato paste and pre-chopped vegetables (carrot, potato, and zucchini), stirring for a few minutes. Then pour in the water.
  3. Add the soaked chickpeas and close the pressure cooker. Let it cook on medium heat for 45 minutes until the meat is fully cooked.
  4. Meanwhile, prepare the Berkoukes (or Aish). Place the Berkoukes in a pot with boiling salted water and stir continuously for about 15 minutes.
