Apricot Tart (Tart Qamar al-Din) – Recipe and Preparation Method

Main Ingredients for Apricot Tart:
Tart Mixture:
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- ½ teaspoon of salt
- ½ cup of milk
- 4 tablespoons of butter
- 3 large eggs
- 1 teaspoon of liquid vanilla (if unavailable, vanilla powder can be used)
- ¾ cup of powdered sugar
Apricot Sauce:
- 2 cups of apricot syrup (Qamar al-Din)
- 2 tablespoons of cornstarch
- 2 tablespoons of powdered sugar
Garnishing:
- A few dried figs
- A few dried apricots
- A few dates
Preparation Method for Apricot Tart:
Prepare the Tart Molds: Start by preparing small tart molds. Grease them with melted butter using a wide brush, then sprinkle a little flour to prevent sticking when removing the tarts after baking.
Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, and salt. In a medium saucepan, combine the milk and butter, heating over medium heat while stirring until the butter is fully melted and the milk is warm.
Prepare the Egg Mixture: In a blender, add the eggs, sugar, and vanilla. Blend on medium speed for 8 minutes until the mixture turns light yellow. Gradually add the flour mixture (a little at a time), blending until fully incorporated before adding more. Then, add the milk and butter mixture, blending for a few more minutes until you have a smooth and soft tart mixture.
Bake the Tarts: Evenly distribute the tart mixture into the prepared molds. Preheat the oven to 180°C (356°F), place the molds on the middle rack, and bake for 8–10 minutes until fully cooked. Remove from the oven and immediately invert the molds onto a cooling rack to cool completely.
Prepare the Apricot Sauce: In a medium saucepan, combine the apricot syrup, cornstarch, and powdered sugar. Whisk together until the cornstarch is dissolved. Cook over medium heat, stirring constantly until the sauce boils. Let it simmer for 2 minutes until it thickens.
Assemble the Tart: Arrange the tart bases on a serving platter. Spoon a little of the apricot sauce over each tart until all the sauce is used. Refrigerate for 30 minutes to allow the sauce to set.
Garnish and Serve: Before serving, garnish the tarts with pieces of dried apricot, figs, and dates, then serve immediately.
