Ingredients for Asida Al-Raghida with Meat
Main Ingredients:
- 5 medium-sized pieces of meat with bones
- 2 onions, finely chopped
- 1 tablespoon of salt and spices (as desired)
- 3 tomatoes, blended
- 2 red chili peppers (or to taste)
- 1 cup of green beans, sliced
- 3 cinnamon sticks
- 3 medium-sized carrots
- 2 dried limes (loomi)
- A small amount of flour and oats (with a ratio of 2:1, more flour than oats)
Filling Ingredients:
- 3 onions, chopped into small pieces
- 1 small teaspoon of spices
- 1 green pepper, chopped into small pieces
- 3 tomatoes, diced
- A pinch of ground dried lime (loomi)
Cooking Method for Asida Al-Raghida with Meat
Boil the Meat:
- Place the meat in a pot with water, salt, and black pepper. Boil for 60 minutes.
- Add the dried limes (loomi) after 30 minutes of boiling.
Prepare the Sauce:
- Sauté the chopped onion in a separate pan and add a tablespoon of spices. Stir in the blended tomatoes.
- Once the mixture thickens, add it to the meat broth. Optionally, you can add the red chili peppers at this stage while sautéing the onion.
- Add the carrots and green beans to the broth.
Prepare the Asida:
- Mix oats and flour, ensuring the flour is twice the amount of oats.
- Remove the meat from the broth, and gradually add the oats and flour mixture to the broth while stirring with a wooden spoon until the asida reaches a thick consistency.
- Once the mixture thickens, return the meat to the pot, reduce the heat, and let it simmer for another 20 minutes.
Prepare the Filling:
- Sauté the onions in oil or butter until golden brown.
- Add a small amount of salt, spices, and ground dried lime.
- Add the diced tomatoes and stir until the mixture thickens, then add the chopped green pepper and cook together until everything blends well.
Assemble the Dish:
- Pour the asida into a serving dish and top it with the prepared filling.
