Ingredients for Babaz Cake:

Babaz Cake

  • 2 cups of sifted white flour
  • 6 large eggs at room temperature
  • 4 tablespoons of softened butter
  • 2 tablespoons of honey
  • 1 tablespoon of baking powder
  • ½ tablespoon of vanilla
  • ¼ tablespoon of salt

For the Topping:

  • 300g of Chantilly cream
  • 1 cup of strawberries or dried cherries (or any available fruit)
  • A bit of shredded coconut

For the Syrup:

  • 4 cups of sugar
  • 8 cups of water
  • Juice of 2 oranges
  • 1 tablespoon of vanilla
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions for Babaz Cake:

  1. Prepare the Cake Batter:

    • In a mixer, combine the flour, salt, honey, butter, and baking powder. Mix for 2-3 minutes until the mixture resembles fine crumbs.
    • Add the 6 eggs and vanilla to the mixture and continue mixing for a longer time until the batter becomes smooth and thick.
  2. Prepare the Molds:

    • Grease medium or small-sized cake molds with butter and lightly dust them with flour. Pour the batter into the molds, filling them only one-third of the way.
    • Cover the molds and let the batter rest for 1.5 to 2 hours to allow it to rise.
  3. Bake the Cakes:

    • Once the batter has doubled in size, place the molds in a preheated oven and bake until fully cooked. Remove the cakes from the oven and allow them to cool.
  4. Prepare the Syrup:

    • In a saucepan, combine water, sugar, lemon zest, orange zest, orange juice, and vanilla. Bring the mixture to a boil while stirring continuously. Once boiled, remove from the heat.
  5. Soak the Cakes:

    • Once the cakes have cooled, soak them in the prepared syrup until fully absorbed. Place the cakes in the freezer for 2 hours to set.
  6. Decorate the Cakes:

    • Remove the cakes from the freezer. Top them with Chantilly cream in a beautiful pattern and garnish with fresh strawberries or any other fruit of your choice. Sprinkle a little shredded coconut on top for extra flavor.
