Baklava Meshkaka – Recipe and Preparation Method

Baklava Meshkaka is a delightful Middle Eastern dessert known for its rich flavor and aromatic scent that captivates the heart. It is often served at special occasions, large gatherings, and especially during Ramadan evenings, providing energy after a long day of fasting. Though it takes some time to prepare, it is relatively easy and does not require much effort.

  • 1 package of ready-made baklava dough
  • ¼ cup sunflower oil
  • ¼ cup melted ghee (vegetable or animal, as preferred)
  • 1 cup finely ground almonds or pistachios

Filling Ingredients:

  • 1 cup liquid milk
  • 2 large eggs
  • ½ cup fine sugar
  • ½ cup sunflower oil
  • 1 tablespoon liquid vanilla (powdered vanilla can be used if unavailable)

For Serving:

  • A generous amount of syrup

Garnish:

  • Finely ground pistachios

Preparation Method:

  1. Prepare the Dough:

    • In a small bowl, mix the oil and melted ghee using a spoon until well combined. Place a sheet of baklava dough on a dry surface and brush it with the oil and ghee mixture using a wide brush. Sprinkle a little finely ground pistachio on top, then shape it into a "meshkaka" style by folding the sheet back and forth until you reach the end, creating a crinkled appearance.
  2. Arrange in the Baking Dish:

    • Place the crinkled baklava sheet in a baking dish and repeat the process with the remaining dough sheets, placing each crinkled sheet next to the previous one until all sheets are used.
  3. Prepare the Filling:

    • In a medium-sized bowl, whisk together the eggs, milk, sugar, and vanilla using a hand whisk until the mixture becomes smooth and consistent. Set the filling aside.
  4. Bake the Baklava:

    • Preheat the oven to 180°C (356°F). Place the baking dish on the middle rack and bake for 10 minutes until the baklava starts to set and turns light golden. Remove from the oven and immediately pour the filling mixture over the hot baklava, then return it to the oven. Bake for an additional 30 minutes until fully cooked and deep golden.
  5. Add the Syrup:

    • Once the baklava is baked, pour the syrup over it while it’s still hot so it absorbs well, achieving the desired flavor. Let it cool slightly, then sprinkle with finely ground pistachios for garnish.
  6. Serve:

    • Cut the baklava into pieces and serve directly.
