Main Ingredients for Preparing Beetroot Salad:
- 4 small tomatoes, cut into halves
- 1 tablespoon of olive oil
- ¼ teaspoon of ground black pepper
- ¼ cup of arugula
- ½ cup of sun-dried tomatoes
- ½ cup of cottage cheese
Ingredients for the Dressing:
- 1 large grapefruit
- 1 large lemon
- ½ teaspoon of ground black pepper
- ¼ cup of olive oil
- 1 teaspoon of salt

- 1 large beetroot
- 3 teaspoons of salt
How to Prepare Beetroot Salad:
Start by washing the grapefruit and lemon thoroughly, then cut them into quarters. Place the grapefruit and lemon pieces in a blender and blend at medium speed until you get juice. Add the ground black pepper, olive oil, and salt, then blend again on low speed for two minutes until all the ingredients are well mixed, forming a smooth dressing. Set it aside for later use.
Next, boil the beetroot. First, wash it well, then place it in a medium-sized pot. Add the required amount of salt and plenty of water to cover the beetroot completely. Bring the water to a boil over medium heat, then cover the pot and reduce the heat. Let the beetroot cook until fully tender.
Once done, take a large, deep plate and add the halved tomatoes. Drizzle them with olive oil and sprinkle with ground black pepper. Stir gently with a wide plastic spoon to mix all the ingredients.
