Burghul Maqluba with Meat and Vegetables – Recipe and Preparation Method
Burghul Maqluba with Meat and Vegetables is a delightful main course often served at gatherings, celebrations, and feasts. It is loved by people of all ages, including adults and children. This dish can be accompanied by a side of salad or yogurt and is rich in nutrients beneficial to the body.

Ingredients for Burghul Maqluba with Meat and Vegetables:
- 2 cups coarse bulgur wheat
- 3 tablespoons olive oil
- 1 kg boneless meat
- 1 medium-sized onion, finely chopped
- 2 large tomatoes, peeled and finely chopped
- 2 cups cooked chickpeas
- 1 large carrot, thinly sliced
- 1 medium-sized red bell pepper, diced
- 1 medium-sized green bell pepper, diced
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cumin
Preparation Method:
Prepare the Bulgur:
- Place the bulgur in a medium bowl, rinse several times, and soak in warm water for 15 minutes.
Cook the Meat:
- Heat olive oil in a medium-sized pot over medium heat. Add the meat and sauté with a wooden spoon until it turns light golden. Add the onion and continue to stir until softened, then add the tomatoes and cook for another 5 minutes.
Simmer the Meat and Vegetables:
- Add 6 cups of water to the pot and bring it to a boil. Cover the pot and let it simmer on low heat for about 2 hours until the meat is fully cooked. After 1 hour, add the carrots, red pepper, and green pepper, then cover again and continue cooking.
Combine with Chickpeas and Spices:
- Once the meat is fully cooked, uncover the pot and add the cooked chickpeas, black pepper, paprika, cinnamon, turmeric, and cumin. Drain the soaked bulgur and add it to the pot. Increase the heat and allow the bulgur to absorb about three-quarters of the broth.
Finish Cooking the Bulgur:
- Reduce the heat, cover the pot again, and let it cook on low heat for another 30 minutes until the bulgur is fully cooked and absorbs all the flavors.
Serve:
- Transfer the Burghul Maqluba with Meat and Vegetables to a serving dish and serve hot.
