Chicken Mixture:

  • 2 large chicken fillets
  • 2 tablespoons of olive oil
  • ¼ teaspoon of salt
  • A small pinch of ground black pepper
  • ½ teaspoon of oregano (you can substitute with dried mint if unavailable)
  • ½ teaspoon of basil
  • ¼ teaspoon of paprika
  • ¼ teaspoon of crushed red pepper flakes

Vegetables:

  • ½ head of cabbage, thinly sliced
  • 1 head of lettuce, thinly sliced
  • 2 medium-sized carrots, grated
  • 2 stalks of green onions, finely chopped
  • 1 medium red bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 medium yellow bell pepper, thinly sliced

Salad Dressing:

  • 4 tablespoons of olive oil
  • 4 tablespoons of mayonnaise
  • 4 tablespoons of vinegar
  • ¼ cup of fresh lemon juice
  • ½ teaspoon of salt
  • A small pinch of ground black pepper

For Serving:

  • Toasted croutons

How to Prepare Cabbage Salad with Grilled Chicken:

  1. Prepare the Chicken:
    In a large, deep bowl, place the chicken fillets and add the olive oil, salt, black pepper, oregano, paprika, and crushed red pepper flakes. Mix everything together with your fingers, ensuring the chicken is fully coated with the seasonings.

  2. Grill the Chicken:
    Heat the electric grill well before use (if you don’t have an electric grill, you can use a thick-bottomed pan on the stove).
    Place the chicken fillets on the grill and cook for 10-15 minutes until they are fully cooked and golden. Use kitchen tongs to flip the chicken and cook the other side as well. Repeat the flipping process several times until the chicken is thoroughly cooked and golden.

  3. Prepare the Vegetables:
    In a large, deep bowl, add the cabbage, lettuce, grated carrots, green onions, red bell pepper, green bell pepper, and yellow bell pepper. Set the vegetable mixture aside.

  4. Slice the Chicken:
    Once the chicken is cooked, slice it thinly with a sharp knife and add the chicken slices to the vegetable bowl.

  5. Make the Dressing:
    In a blender, combine the olive oil, mayonnaise, vinegar, lemon juice, salt, and black pepper. Blend on medium speed for 2 minutes until the dressing becomes smooth and creamy.

  6. Assemble the Salad:
