Ingredients for Cajun Pasta:
- 500 grams (1 lb) of chicken breast, skinless and cut into cubes.
- 250 grams (9 oz) of penne pasta.
- 2 tablespoons of butter.
- 1 red bell pepper and 1 green bell pepper, both cut into cubes.
- ½ cup (100 grams) of quartered mushrooms, chopped green onions, halved cherry tomatoes, and grated Parmesan cheese.
- 1 cup (250 ml) of cooking cream.
- ½ teaspoon (2.5 grams) of salt and black pepper.
- ¼ teaspoon (1.25 grams) of garlic powder and dried basil.
For the Cajun Spice Mix:
- 1 teaspoon (5 grams) of paprika.
- ½ teaspoon (2.5 grams) of oregano and thyme.
- ¼ teaspoon (1.25 grams) of cayenne pepper, garlic powder, and onion powder.
- A pinch of salt and black pepper to taste.
How to Prepare Cajun Pasta:
- In a bowl, mix the Cajun spices, garlic powder, onion powder, paprika, thyme, oregano, cayenne pepper, salt, and black pepper.
- Coat the chicken cubes with the Cajun spice mix and let it marinate for 15 minutes.
- Cook the pasta in salted water until al dente, then drain and set aside.
- In a skillet over medium heat, melt 1 tablespoon of butter and add the chicken. Cook the chicken until fully done, then set it aside.
- In the same skillet, melt another tablespoon of butter and add the red and green bell peppers, along with the green onions. Sauté for about 7 minutes until the vegetables are soft.
- Add the black pepper, cooking cream, garlic powder, salt, and dried basil. Let the mixture simmer until it starts to bubble.
- Return the cooked chicken and pasta to the skillet, stirring everything together to coat the pasta and chicken with the creamy sauce and vegetables.
